Our Story

Meet eric & jessica

 
 
 
 

Eric and Jessica are North Carolina natives. Their similar interests and hobbies meant their paths were to inevitably cross — and did so in 2016. Since then, they have been traveling, camping, hiking, taking care of their dogs, cats and chickens, all while fixing up their log cabin and 4-acre property — balancing it all with full time careers.

Born and raised in Waxhaw, Eric moved back into his childhood home — a two-story quaint log cabin in the woods — in 2014 and has been diligently making upgrades with Jessica’s help since they met. A natural woodsman and handyman, Eric prefers most of his time be spent outdoors. From mountain biking and hiking to cutting down trees for firewood and using his tractor for any reason he can think of. He spent a lot of years in the Charlotte beer photography community that led to many book deals and magazine covers. Eric’s focus has recently been on his new role of Trails Committee Chair for Tarheel Trailblazers.

Jessica was born in Hickory, then moved with her father to the city of Charlotte in 1991. Her interest in Southern comfort food began at an early age watching family dinners being prepared by everyone in her grandparents' kitchen. A naturally busy body, Jessica’s creative outlets take shape in the form of scratch-made recipes, food photography, and DIY home organization projects. Her food photography can be seen on magazine covers, restaurant websites and throughout the local Charlotte food social scene. Sharing her food experiences with others — whether in person or through her retail food products — is where she truly thrives.

 

 

Camp Out Beginnings

a reason to have company

Living in the country can be a challenge in getting friends and family to visit. We decided to create events where we would host both friends and family to a memorable meal with camping and fireside chats under the stars. What started back in 2017 as a simple reason to have company, evolved into something people would continually ask about — “When is the next campout?” and “Remember to invite me to the next one!”.


After a lot of hard work, countless hours of brainstorming, busy weekends practicing and perfecting the idea with friends and family, and meticulous planning we thought it was time to take these camp outs public!
