Spinach & Steak Salad

Instead of with the most comforting of sides like mashed potatoes or corn, switch it up and have it over a bed of spinach with a hefty side of veggies.

INGREDIENTS

  • Fresh spinach enough for two salad bowls

  • 9-ounce filet mignon

  • Vegetables of choice, we chose:

    • broccoli, carrots, tomatoes, onions

  • Blue cheese crumbles

DIRECTIONS

  1. Preheat grill.

  2. Salt and pepper both sides of the filet. Set aside

  3. Gather spinach and salad toppings. Arrange in bowl around the edges.

  4. Grill filet to your preferred temperature. Lay on top of salad in between toppings.
